Frankenstein Cupcakes

Happy Halloween!!!!! Since I kind of slacked yesterday (and today is Halloween!!!!!), y’all get not one but two recipes today! Wahoo! So keep an eye out this afternoon for the second cupcake recipe coming your way!
I made these chocolate cupcakes last night – so this really is a brand-new recipe! Devils Food cupcakes with a delicious (and super green) icing… and so stinkin’ cute! I really debated calling these cupcakes Frankenminion cupcakes – don’t they look like the minions in Despicable Me!?
Okay, recipe time! It makes somewhere between 15 and 20 cupcakes – depending on how monstrous you want your Frankencupcakes to look. I vote pull a Texan – bigger is always better.
Ingredients
For the Cupcakes
- 1 box of Devil’s Food Cake Mix
- 3 eggs
- 1/2 cup of vegetable oil
- 3/4 cup of skim milk
- 3/4 cup of light sour cream
- 2 teaspoons of vanilla extract
For the Icing
- 1 1/2 cups of butter
- 1 teaspoon of vanilla extract
- 4 cups of powdered sugar
- 5-8 drops of green food coloring (you want this really green)
For Decorating
- Ghiradelli White Melting Wafers
- Black food gel
- Chocolate sprinkles
- Brown M&M minis
- Red food gel
Directions
For the Cupcakes
Begin by preheating the oven to 350°F and spraying your cupcake tins with a bit of nonstick cooking spray. Fill your cupcake tins with cupcake liners and spray again with nonstick cooking spray (trust me – it’s one of my tricks!). In a large mixing bowl, stir together all of the cupcake ingredients (cake mix, eggs, vegetable oil, skim milk, light sour cream, and vanilla extract). Beat the ingredients together until they are 100% incorporated and then pour the cupcake batter into the liners – until they’re about 75% of the way full.
Place the cupcake pan into the oven and bake for about 20-25 minutes, or until a toothpick or knife inserted into the center of the center cupcake comes out clean. Set the cupcakes aside to cool in the pan for 5 minutes before moving the cupcakes to a plate (so you can make the next batch!).
For the Icing
Heat the butter in a microwave-safe bowl in a microwave for about 30 seconds, until it’s fairly melted but not completely melted. Add the vanilla extract and – cup by cup – add the powdered sugar, stirring to fully incorporate after each addition. Once that’s all icing-y, add the green food coloring. Again, stir periodically while adding the food coloring. You want the icing to be really, really really green. When it’s ready, pipe or spread the icing on top of each cupcake, very thickly.
For Decorating
Using the black gel, make little dots (pupils!) on the center of each white chocolate wafer – on the flat side. Place two wafers in each cupcake, so that they’re slightly sticking up (as seen in the picture). Sprinkle about a teaspoon of chocolate sprinkles atop each cupcake for the Frankencupcake’s hair… add another chocolate sprinkle on each cupcake horizontally between the eyes as the mouth.
Put two mini M&Ms on opposing sides of each cupcake as Frankenstein’s bolts – face the M&Ms inwards so that the blank side is facing outwards. Finally, draw some stitches on the cupcakes using the red, fine-tipped gel. Turn on the spooky Halloween music and serve!
