Summery Grapefruit Mojitos

Happy Monday, sunshines!

I was in Austin over the weekend for the final opera of Austin Opera’s season – Don Giovanni. A) It was fabulous. B) more on that later this week. Get excited for a super fancy fashion post.

So back to this weekend: temperatures on Saturday reached over 90°F (32°C) in Austin. Damn hot. In April. What is this?

Answer: basically summer.

So, since it’s “basically summer”, I think we should start drinking like it’s summer. Follow the directions below to create my new favorite cocktail: a Summery Grapefruit Mojito! Note that the recipe below makes one cocktail.

Summery Grapefruit Mojitos

Ingredients

  • 8-10 mint leaves
  • 1 tablespoon of sugar
  • 1 1/2 teaspoons of lime juice
  • 1 ounce of grapefruit juice
  • 2 ounces of white rum
  • 2 ounces of soda water (I used Topo Chico)
  • ice cubes
  • 1-2 thin slices of grapefruit

Directions

In a glass, combine the mint leaves, sugar, lime juice, and grapefruit juice. Muddle and then add the white rum and soda water.

Stir the ingredients together until sugar has dissolved. Add the ice cubes, stir, and garnish with the grapefruit slices. Enjoy!
