Egg-In-Hole Baked Avocados

I have recently become totally and complete obsessed with avocados. Avocados in everything. With everything. Eggs, salads, soups, everything.

Obsessed.

My most recent avocado recipe obsession? Egg-in-Hole Baked Avocados. Yum. Check out the recipe below – perfect for any meal in the day (except perhaps dessert) – and prepare for your tumtum to become super happy. PS this recipe makes two servings.

Egg-In-Hole Baked Avocados

Ingredients

  • 1 avocado, halved and pitted
  • 2 eggs
  • 3 tablespoons of chopped green onions
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of freshly ground black pepper, plus extra to taste
  • 1 teaspoon of sea salt, plus extra to taste

Directions

Preheat oven to 425°F (220°C). Flip a muffin tin over and spray the underside of the tin with nonstick cooking spray.

Remove about 1-2 tablespoons of flesh from the center of each avocado half (to make a bit of extra room for the egg). Place the avocados, flesh-side-up, in the crevices between muffin tins on the sheet. Crack an egg into each avocado half, trying to get as much of the yolk in first before allowing the whites to spill over on top. Sprinkle with chopped green onions, turmeric powder, garlic powder, freshly ground black pepper, and sea salt.

Place the tin with the avocados in the oven and bake for about 15 to 20 minutes, or until the egg whites have set. Remove from the oven and add more spices to taste. Serve alone or with bread – either way is perfectly delicious!
