What do you do when a soufflé goes oh-so wrong (aka never rises to the sun to greet its maker)?
Turn it into a bite-sized snack. Duh.
I was inspired to make this dish after my intended recipe for today – the Chocolate Raspberry Soufflé – failed to rise and turned out flat like a pancake. Womp, womp. One would say sad times, but then I realized that if I changed just one step and two ingredients, the dish would make the most incredible little bite-sized snack – perfect for your upcoming Galentine’s Day shindig! And I was so right. These Chocolate Raspberry Soufflé Bites are perfectly gooey and wonderfully delicious.
Oh and PS as odd as it may seem, these bites are actually low-cal! Under 150 calories for four pieces. Yay, happy day! Keep reading for the full recipe.
Chocolate Raspberry Soufflé Bites

INGREDIENTS:
- 1/2 cup of raspberries, rinsed and pureed, plus extra for decoration
- 2 teaspoons of cornstarch
- 1/4 cup of unsweetened cocoa powder
- 1 teaspoon of vanilla extract
- 1 large egg white
- 1 tablespoon of ground flaxseed
- 3 tablespoons of water
- 3 tablespoons of sugar
Directions:
Preheat the oven to 400°F (200°C). Spray four ramekins with nonstick cooking spray and set aside.
In a medium-sized mixing bowl, combine all of the ingredients: the pureed raspberries, cornstarch, cocoa powder, vanilla extract, egg whites, ground flaxseed, water, and sugar. Stir until the ingredients are thoroughly incorporated and then pour the batter evenly between the four ramekins.
Place the ramekins on a baking sheet and then place the baking sheet in the oven to bake for 15 minutes. After 15 minutes, remove the baking sheet from the oven and let the soufflés cool for a few minutes before inverting the soufflés onto a plate. Cut each soufflé into four small pieces, plate the bites, place a raspberry on top of each soufflé bite, and serve!
