Lately, I’ve been thinking a lot about brunch. Scratch that. Dreaming. pancakes, waffles, whatever! Really just any brunchy, carbalicious dish.
Yes, carbalicious is now officially a word.
Whatever you choose, just be sure to have a large pitcher of mimosas standing by at the ready. And – just to settle any argument – a proper mimosa is made up of about 85-90% sparkling wine and 10-15% orange juice. Not the other way around. Any “mimosa” containing more than 30% orange juice is truly just a spiked OJ masquerading as a cocktail.
Now that that’s settled, keep reading for my blueberry whipped butter recipe! It takes less than 5 minutes to make, making it just about as easy to make as a pitcher of proper mimosas.
Blueberry Whipped Butter

INGREDIENTS:
- 2 sticks (1 cup) of butter, softened
- 1/2 cup of blueberries, washed and crushed
- 1/4 cup of sugar
- 1 1/2 teaspoons of vanilla extract
- 1/2 teaspoon of lemon extract
DIRECTIONS:
Combine all of the ingredients in a large mixing bowl and beat with an electric mixer until smooth.
Place the whipped butter in a dish for serving, cover the dish with plastic wrap, and place the dish in the refrigerator until time to serve.
