INGREDIENTS:
- 1/4 cup of lite cream cheese
- 2 eggs
- 1 teaspoon of sugar
- 1/2 teaspoon of cinnamon
DIRECTIONS:
Combine all of the ingredients together in a blender and puree until smooth. Bubbles should form, but you should wait 1-2 minutes to let the bubbles settle.
Grease a pan with butter and place on medium-high heat. Pour 1/4 of the batter into the pan and rotate the pan to allow the batter to spread all over the bottom of the pan. The batter should become quite thin. Cook for 1-2 minutes until the bottom is solid and then flip to continue cooking the crêpe on the other side (about 1 minute). Plate the crêpe and repeat for the rest of the batter.
Top with berries, nutella, really whatever toppings you love, and enjoy!
