What? They take under 10 minutes to make four! It’s the perfect dish to make when you have time to spare before heading into the office or off to class. Plus, with about 15g of protein, these will keep you full for a long, long time. Keep reading for the full recipe!

INGREDIENTS:

  • 1/4 cup of lite cream cheese
  • 2 eggs
  • 1 teaspoon of sugar
  • 1/2 teaspoon of cinnamon

DIRECTIONS:

Combine all of the ingredients together in a blender and puree until smooth. Bubbles should form, but you should wait 1-2 minutes to let the bubbles settle.

Grease a pan with butter and place on medium-high heat. Pour 1/4 of the batter into the pan and rotate the pan to allow the batter to spread all over the bottom of the pan. The batter should become quite thin. Cook for 1-2 minutes until the bottom is solid and then flip to continue cooking the crêpe on the other side (about 1 minute). Plate the crêpe and repeat for the rest of the batter.

Top with berries, nutella, really whatever toppings you love, and enjoy!
