This summer fruit salad is ever-so refreshing and delicious! I made it a few weeks ago for my Bloggers Give Back event and served it alongside a fabulous cheese plate and my favorite champagne cocktails.
I love this Watermelon, Blackberry, and Mint Salad because a) it combines all of my favorite ingredients (admittedly, it’d be even better if it used yellow watermelon instead of red watermelon!), b) it’s just SO perfect for a hot, summer day, and c) it’s so crazy-easy that even my kitchen-incompetent grandmother could make it.
And she likely will when I’m visiting her in a few weeks.
Seriously though – this Watermelon, Blackberry, and Mint Salad would be perfect to serve as an afternoon snack on a hot, summer day, during a girly brunch as a side dish, or perhaps even as an appetizer for an evening outdoor cocktail party this summer (over Fourth of July weekend perhaps?). This salad is such a refreshing, low-calorie treat! The perfect healthy dish to share for a party, or hoard during a brunch. Plus, it only requires three ingredients... and we all love that!
- 4 cups of diced watermelon
- 1 cup of blackberries
- 2 tablespoons of mint leaves
- In a large bowl, toss all of the ingredients together.
